Rice and Lentils (Mujeddrah)
1 cup brown lentils
2 teaspoons salt
1 cup long grain rice
2 cups water
2 large onions sliced in rings
2 Tbs. vegetable/olive oil
Pick over the lentils; wash and drain. Boil in water with one teaspoon of salt for about 30 minutes or until tender.
In another pan, bring water to a boil. Add the rice and remaining salt. Cook the rice until tender.
Drain lentils and mix with cooked rice.
Saute the onions in oil until crispy and very well done. Add to the lentils and rice.
